Roasted grapes with fresh cheese and granola

Take your weekend brunch to the next level: grapes become irresistibly sweet when roasted in a hot oven with some thyme and honey. Granola adds crunch and the fresh cheese a creamy touch.

How to make it

    Preheat the oven to 200°C. Put the grapes in the oven dish: the whole bunch with the stems, or just the individual grapes. Both is possible.

    Mix the thyme, olive oil, red wine vinegar, honey, pepper and salt in a small bowl.

    Pour this mixture over the grapes and place in the oven.

    Grill for 25 minutes or until the grapes begin to burst open. If you grill the bunch as a whole, it may take a little longer.

    Serve as follows: start with a little fresh cheese at the bottom, top with the grapes and sprinkle with the granola.

 

Tip: Grapes sprinkled with one of our nut granolas are a surprising addition to a cheese dish.

  • grapes (red or white: choose what you like) 400 gr
  • sprigs fresh thyme 4
  • olive oil 4 tbsp
  • red wine vinegar 4 tbsp
  • honey 2 tbsp
  • pepper and salt a pinch
  • cottage cheese or fresh cheese 400 gr
  • granola a handful
